Lauren Disterhaft, O.D., is the 2025–26 Optometric Fellow at Minnesota Eye Consultants. Originally from Wisconsin, Dr. Disterhaft earned her Doctor of Optometry degree from the Illinois College of Optometry (ICO) in May 2025. She previously received a Bachelor of Science in Biomedical Biology with a minor in Spanish from St. Norbert College.
Dr. Disterhaft’s clinical experience at ICO provided a strong foundation in comprehensive and specialty eye care. She served as a teaching assistant and tutor in key optometric subjects such as Clinical Methods, Gross Anatomy, and Optics, helping support and mentor fellow students throughout their training. Her commitment to leadership extended beyond the classroom—she was Treasurer of the Private Practice Club, a mentor in ICO’s Big-Little Program, and a student leader during orientation week.
She is a member of the American Optometric Student Association and was inducted into both the Beta Sigma Kappa and Tomb & Key honor societies. Dr. Disterhaft also took part in vision screening outreach events for student athletes and underserved communities in the Chicagoland area.
Outside of clinic, Dr. Disterhaft enjoys staying active through hiking and traveling, baking sweet treats, and diving into a good book or crochet project. A fun fact: she was a cheerleader for the Green Bay Packers during her undergraduate years.
